Banana Banana Bread
Ingredients
  • flour: 240g
  • nutmeg: 1 tsp
  • cinnamon: 1 tsp
  • grous cloves: 1/4 tsp
  • baking soda: 1 tsp
  • salt: 1/4 tsp
  • 1 stick of melted butter
  • brown sugar: 160g
  • 2 beaten eggs
  • 18 fl oz blended bananas
  • Walnuts / chocolate chips (optional, but not really)
Instructions
  1. Preheat oven to 350, lightly grease pan
  2. In large bowl, combine flour, baking soda and salt, walnuts and chocolate chips
  3. Melt butter in the microwave
  4. Blend bananas, be sure that you’ve got the correct volume.
  5. Add eggs, melted butter and brown sugar, blend until smooth.
  6. Pour blended mixture into flour mixture, stir just to moisten.
  7. Pour batter into pan
  8. Bake for 1 hr, until toothpick comes out clean.
Pumpkin Soup
Ingredients
  • Pumpkin puree
  • Olive Oil
  • 1 medium sweet onion, chopped
  • 2 Carrots, chopped
  • 2 Parsnips, chopped
  • 2 Potatoes, cubed
  • 2 Garlic cloves, minced
  • 1/4 c white wine, optional
  • 3 c bone broth, or stock of choice
  • 2 springs fresh thyme, leaves removed
  • 3 fresh sage leaves, minced
  • 2" knob fresh ginger, peeled and grated
  • 1 tsp cinnamon
  • Salt and pepper, to taste
Instructions
  1. Heat large soup pot or dutch oven over med high heat.
  2. Grease with olive oil, add onion, carrot, parsnip, garlic, potato
  3. Saute until softened, about 10 min.
  4. Add white wine and scrape any browned bits from the bottom
  5. Add broth, reserved pumpkin, thyme, sage, ginger and cinnamon, stir well.
  6. Reduce heat, cover and simmer for 20 min.
